Lindt Dark Chocolate, Pecan and Cranberry Cookie Bars

A sweet and savoury bar that packs a healthy punch.

The mother of three boys, Montreal-based Stéphanie Morin lives an active life, which is why she prefers “healthier recipes for my family—even at Christmas time,” she says. “I added flax seeds and exchanged the butter for coconut oil in these bars, but I still remember how good the original cookies were when my mom and grandmother made them.” Everyone in the family enjoys the sweet and salty flavour so much that the first batch (which gets made a week before Christmas) is inevitably gobbled up before guests even have a chance to arrive, often leaving Stéphanie to whip up a second batch in time for holiday dinner.

  • ½ cup (125 mL) coconut oil
  • ⅔ cup (170 mL) light brown sugar, packed
  • 1 egg
  • 1 tsp (5 mL) vanilla extract
  • ¾ cup (190 mL) whole-wheat flour
  • ¼ cup (60 mL) whole golden flax seeds
  • ¼ cup (60 mL) pumpkin seeds
  • ½ tsp (3 mL) baking soda
  • ½ tsp (3 mL) cinnamon
  • ½ tsp (3 mL) salt
  • 1 ½ cups (375 mL) large flake oats
  • 1 bar (100 g) Lindt Excellence 78% Cacao Dark Chocolate, roughly chopped
  • ½ cup (125 mL) dried cranberries
  • ½ cup (125 mL) pecans, roughly chopped
  • 2 bars (200 g) Lindt Excellence 78% Cacao Dark Chocolate (optional)
