  • 1 bar (100 g) Lindt Excellence 78% Cacao Dark Chocolate, melted
  • 6 eggs, separated and divided
  • 1 ¼ cups (310 mL) granulated sugar
  • A pinch of salt
  • 6 cups (1.5 L) whole milk
  • 1 cup (250 mL) 35% cream
  • 2 cinnamon sticks
  • 1 ½ cups (375 mL) dark rum (optional)
  • Freshly grated nutmeg, to taste
